These are really simple recipes, but if you can't be bothered the Co-Op sell a Vegan Mulled Wine (2011)

Marks and Spencer have mulled wine and mulled cider, both suitable for vegans (2011)

Glhwein (Germany)

Glgg (Scandinavia)

Negus (Great Britain)

Ingredients:
1 bottle good red wine ( 75 cl )
200-250ml water
110g sugar
1 cinnamon stick
3-4 cloves
The juice of 1 orange
lemon peel


Method
In a saucepan mix the water, sugar, orange juice, spices and lemon peel all together bring to the boil and let it simmer very gently for 15-20 minutes
strain the liquid, return to saucepan
add the red wine and bring back to simmering point, making sure not to boil, or all the alcohol will evaporate

Ingredients:
2 cinnamon sticks
1 small piece candied ginger
1 tbsp orange zest
6 whole cloves
1 cup vodka
1 bottle dry red wine
1 cup sugar
1/2 cup slivered almonds
1/2 cup raisins

Method
In a large saucepan add all the ingredients and stir well.
Heat over medium heat just until the wine begins to simmer. Remove from the heat. Do not allow the glgg to boil.
Serve in mugs with a few almond slivers and raisins in each one

This drink was created by colonel Francis Negus in the early 1700s.


Ingredients:
50 ml Port (2 fl oz)
25 ml Claret (1 fl oz)
25 ml Burgundy (1 fl oz)
1 Teaspoon Brandy
50 ml Water (2 fl oz)
1/2 Lemon, thinly sliced in rings
small pinch Grated nutmeg
1 Heaped tsp Sugar


Method
Makes 1 glass
Gently heat all the ingredients in a small saucepan.

Strain into a heat-proof goblet when hot

Wassail (Mulled Cider or Ale)

Another Mulled Wine Recipe

Mulled Ale

Ingredients:
4 litres apple cider,
2 litres cranberry juice,
1 tablespoon aromatic bitters,
4 cinnamon sticks,
1 tablespoon white allspice,
2 oranges, studded with cloves,
450ml rum.


Method
Combine the ingredients and heat gently. Serve warm.

Ingredients:
Serves 10 (large servings)
Ingredients
2 x 75 cl bottles of red wine
1 orange studded with cloves
2 oranges, sliced
2 lemons, sliced
6 tbsp sugar
1 Cinnamon stick (5cm)
2 tbsb fresh or ground ginger
2 tablespoons spirit Cointreau, Grand Marnier or cherry brandy, sloe gin etc.

Method
Put all the ingredients in a saucepan with 1.5 litres water then heat to simmering point, stirring until all the sugar has dissolved. Keep it just simmering for 20 minutes. Do not boil or all the alcohol will evaporate!!

Ingredients:
1.14lt (2 pints) Ale
1 glass Brandy or Rum
1 tbsp Sugar
Pinch Ground Cloves
Pinch Ground Nutmeg
Pinch Ground Ginger

Method
Place all of the ingredients except brandy (or rum) into saucepan, heat but do not allow to boil.
Add brandy and more sugar and flavouring if necessary, serve at once.

Not really a Christmas drink, but it'll warm your cockles!

Ingredients:
1 L dark rum (cheap!)
50 g sugar
cremat
1 fresh cinnamon stick
2 tbsp whole coffee beans
1/2 lemon peel

Method:
Add all ingredients to a terracotta pot (or something heat resistant). On the side, heat up some rum on the stove. Once the rum is hot, light it and slowly pour it into the terracotta pot. Stir the beverage slowly until 2/3 of the liquid remains, then serve. Serves 8 people.
